The promise printed across the top of our menu board is literal: every cut at Kim Sukseong Itaewon goes through dry aging and wet aging in turn. Dry to drive off moisture and concentrate flavour, wet to hold the juices in — 480 hours on the same piece of meat. It is the reason guests who judge Itaewon restaurants by their aging keep coming back.
CHAPTER · 02
Aged pork neck goes on the grill at a full 2cm. Cut it thinner and the juice that 480 hours built up simply runs out onto the plate. If you prefer single cuts, the aged pork belly (160g, ₩17,000) and gabrisal (150g, ₩19,000) are the ones to get — and almost everyone finishes with the spicy marinated crab rice (₩9,000).

Spicy marinated crab rice (₩9,000), pork kimchi stew (₩9,000), beef brisket soybean paste stew (₩9,000), pork-loaded jjapaghetti (₩10,000), and minari bibim noodles, cold noodle soup and blue crab ramen at ₩7,000 each. At lunch there is also the pork-loaded kimchi stew special (₩10,000) — so it works as a plain meal stop too, not only as a Korean BBQ night out.
